Schiffer was born on 25 August 1970 in the town of Rheinberg, in what was then West Germany. She was discovered in a Düsseldorf nightclub in 1987 by Michel Levaton, the head of Metropolitan Model Agency.

Her discovery led to modeling work in Paris and a major international career during the 1990s. She became strongly associated with Chanel, Guess, and numerous magazine covers, and was often grouped with Cindy Crawford, Naomi Campbell, Christy Turlington, and Linda Evangelista.

Rheinberg is sometimes confused with Düsseldorf because Düsseldorf was the city where Schiffer was discovered and where she began working in fashion. Her birthplace, however, was Rheinberg, a separate town in North Rhine-Westphalia.
