Boyd Tunnock developed the Tunnock’s Teacake in 1956.

The product is built on a small round shortbread biscuit, topped with a dome of Italian meringue and covered in a thin layer of chocolate. The meringue is a whipped egg-white confection, lighter and more delicate than conventional gelatine-based marshmallow. Milk chocolate teacakes are especially associated with their red-and-silver foil wrappers.

Boyd Tunnock was part of the family business founded by his grandfather, Thomas Tunnock, in Uddingston, Scotland, in 1890. Thomas founded the company, but he was not the developer of the teacake; that distinction belongs to Boyd.

The word “teacake” can cause confusion across Britain. In parts of England, a teacake usually means a fruit-studded bread roll served toasted and buttered. Tunnock’s version is a chocolate-coated meringue confection, strongly linked with Scottish identity and afternoon tea.
