Saumagen is the German pork dish traditionally made by stuffing meat and other ingredients into a pig’s stomach.

The Palatinate specialty commonly contains pork, potatoes, and seasonings, although recipes vary by household and locality. The filled stomach is cooked, then sliced before serving. Despite its appearance, the stomach functions mainly as a casing rather than being the central filling.

Saumagen became especially well known outside the Palatinate through former German Chancellor Helmut Kohl, who famously served it to visiting international politicians.

Saumagen is not the same as Sauerbraten, a marinated pot roast, or Rouladen, beef rolls filled with ingredients such as bacon, onions, mustard, and pickles. Its distinctive preparation is the use of a pig’s stomach as the casing.
