The Bellini cocktail is made with sparkling wine and peach purée.
Giuseppe Cipriani created the Bellini at Harry’s Bar in Venice, Italy, in 1948. The drink traditionally combines white peach purée with Prosecco, the Italian sparkling wine. Its pale pink color reportedly reminded Cipriani of a toga in a painting by the Venetian artist Giovanni Bellini.
The Bellini became associated with Harry’s Bar and later spread internationally as a brunch and aperitif drink. Fresh white peaches are difficult to obtain year-round, so bars may use prepared purée or peach nectar, though these can produce a sweeter, less aromatic result.
The Rossini is a related variation that uses strawberry purée instead of peach. A Mimosa is different again, combining sparkling wine with orange juice rather than peach.
