What restaurant did Ignacio Anaya later open in Piedras Negras?

The story behind the answer

What restaurant did Ignacio Anaya later open in Piedras Negras? Nacho's Restaurant. Ignacio “Nacho” Anaya opened it in Piedras Negras after the Victory Club, where he created the dish now known as nachos.

Anaya worked at the Victory Club in Piedras Negras, Coahuila, a Mexican border city across from Eagle Pass, Texas. In 1943, when a group of American customers arrived and the cook was unavailable, he improvised with fried tortilla pieces, cheese, and jalapeño peppers. The result was placed on the menu as “Nacho's Especiales.”

The nickname “Nacho” is a familiar Spanish short form of Ignacio, so the dish’s name came directly from its creator. As nachos became popular, Anaya was promoted to chef and eventually opened his own establishment, Nacho's Restaurant, when the Victory Club closed in 1961.

A common mistake is assigning the restaurant’s name to the original invention. The original dish was created at the Victory Club; Nacho's Restaurant was Anaya’s later business. Anaya died in 1975, but Piedras Negras continues to commemorate his legacy with nacho celebrations.
