Which university hosted Centerplate's 2012 record nacho serving?

The story behind the answer

The University of Kansas hosted Centerplate’s 2012 record nacho serving.

The event took place in Lawrence, Kansas, during the Kansas Relays on April 21, 2012. Centerplate, the food-service provider for Kansas Athletics, coordinated the preparation of a 4,689-pound serving at the university’s Memorial Stadium. The university’s athletics department and community volunteers helped assemble and serve the massive dish.

The nachos were arranged on a custom-built tray roughly 80 feet long. The ingredients included chips, salsa, tomatoes, meat, beans, jalapeños, and more than 2,200 pounds of cheese. The completed serving was recognized by Guinness World Records as the largest of its kind at that time, though later promotional events have produced larger nacho records.

The University of Kansas connection is easy to mix up with Kansas State University or the state’s broader college-sports culture. The host institution was specifically the University of Kansas, whose Jayhawks athletics program provided the setting. The event also supported L.I.N.K., a Lawrence charity providing meals to low-income families, so the record attempt combined sports, concessions, and local fundraising.
