Centerplate made the 4,689-pound serving of nachos at the University of Kansas in 2012.
The record-sized dish was assembled on April 21, 2012, during the Kansas Relays at the University of Kansas in Lawrence. Centerplate, Kansas Athletics’ food-service provider, worked with the Mexican restaurant Salty Iguana, university athletics staff, volunteers, and the Lawrence Interdenominational Nutrition Kitchen. Guinness World Records recognized the result as the world’s largest serving of nachos at the time.
The enormous serving was built on an approximately 80-foot-long tray. It included tortilla chips, salsa, tomatoes, meat and beans, jalapeños, and more than 2,200 pounds of cheese. A broken cooler spoiled nearly 2,000 pounds of ingredients before the event, so organizers had to replace supplies locally and still complete the record attempt.
The event was also a fundraiser rather than simply a spectacle. People could receive nachos by donating a dollar or canned food, and proceeds supported L.I.N.K., which provides meals for low-income families. The record illustrates Centerplate’s role as an event hospitality and concessions company, not as a packaged-food brand.
