The talking gingerbread character in the Shrek films is Gingy.

Gingy is a small gingerbread man who first appears in the 2001 film Shrek. Lord Farquaad interrogates him about the location of other fairy-tale creatures, creating one of the film’s earliest examples of its irreverent treatment of familiar storybook characters. Gingy’s courage and quick wit make him more than a decorative background figure.

He returns in later Shrek films and becomes part of the ensemble of fairy-tale characters living in Far Far Away. His design includes icing details and gumdrop buttons, linking him visually to traditional gingerbread-man imagery.

Gingy is sometimes identified simply as “the Gingerbread Man,” but that describes his type rather than his character name. “Gingy” is the short personal name used in the films. He is also distinct from the Muffin Man, whom he mentions during his interrogation in the first movie.
