What is the name of the Imperial scientist who experimented on Grogu?

The story behind the answer

The Imperial scientist who experimented on Grogu is Dr. Pershing. He works for the remnants of the Galactic Empire and is assigned to study the Child after the Mandalorian captures him.

Dr. Pershing appears in the first episode as part of the Imperial team overseeing the bounty. When the Mandalorian returns to rescue Grogu, he finds the Child sedated and attached to laboratory equipment. Pershing claims that he protected the Child and prevented the Imperial guards from killing him, suggesting that his motives are more complicated than those of the officers around him.

In later seasons, Pershing reports that Grogu’s blood contains unusually high levels of “M-count,” a reference to midi-chlorians and Force sensitivity. His research becomes connected to the Empire’s attempts to understand cloning and create a body suitable for Emperor Palpatine’s return.

Dr. Pershing is often confused with the Client, who commissions the original kidnapping, or Moff Gideon, who commands the Imperial operation. Pershing is the scientist, not the military leader or the person who initially hires the bounty hunter.
