The tradition is linked to German immigrant foodways and was developed commercially by Maine companies including W.A. Bean and Rice’s. The bright color is created during processing and is primarily a visual signature rather than an indication that the sausage contains a different kind of meat. Red snappers are commonly served in Maine-style split-top buns, which stand upright and make toppings easier to add.
Maine’s version should not be confused with ordinary red-colored hot dogs found elsewhere, nor with the red hue produced naturally by curing ingredients in many sausages.
