Spätzle is a soft egg noodle or dumpling made from a loose batter of flour, eggs, salt, and liquid. The dough is pressed, scraped, or dropped into boiling water, producing irregular pieces rather than uniform machine-cut noodles.

Swabia spans parts of southwestern Germany, including Baden-Württemberg and Bavaria. The food is especially prominent in Swabian cooking and appears alongside dishes such as Zwiebelrostbraten and Sauerbraten. Kässpätzle, layered with cheese and onions, is another well-known preparation.

The word and method have regional variations, and similar egg noodles are found in neighboring Austria, Switzerland, and parts of Central Europe. That broader distribution does not change Spätzle’s especially strong culinary association with Swabia.
