In large-scale venues, nacho cheese is often what kind of cheese sauce?

The story behind the answer

In large-scale venues, nacho cheese is often a processed cheese sauce. Stadiums, movie theaters, schools, and convenience stores commonly use this smooth sauce instead of freshly shredded cheese because it is easier to store, heat, portion, and dispense consistently.

Commercial nacho cheese is usually formulated with cheese or processed cheese, water or milk, peppers, seasonings, and emulsifying ingredients. The result stays pourable and relatively stable under warming, making it practical for pump dispensers and high-volume service.

This is not the same as saying every nacho uses processed cheese. Traditional nachos, first associated with Ignacio “Nacho” Anaya’s 1943 creation in Piedras Negras, used melted cheese and jalapeño slices. The pumpable stadium version became especially prominent after Frank Liberto helped popularize concession-stand nachos in the 1970s.
