Before conching, chocolate could be coarse and gritty because ground cocoa particles were not fully dispersed. The process also helped reduce harsh flavours and moisture, producing chocolate that melted more smoothly in the mouth.
Conching is still used in chocolate manufacture, although modern equipment and recipes vary. It should not be confused with tempering: conching develops texture and flavour, while tempering controls cocoa-butter crystals so finished chocolate sets with a shine and a clean snap.
