Rodolphe Lindt invented the conching machine used to refine chocolate in 1879.

Lindt was a Swiss chocolatier and confectioner in Bern. His invention arose after a chocolate mixer was accidentally left running overnight. The prolonged mixing produced a smoother, more fluid chocolate than the rougher products common at the time.

Conching is a prolonged mixing and aeration process. It reduces undesirable volatile compounds, distributes cocoa butter, and improves the texture and flavor of chocolate. The exact time and temperature depend on the recipe and the desired style.

The process helped establish the smooth texture associated with modern eating chocolate. Lindt’s company later became part of the Lindt & Sprüngli group, but the original conching breakthrough predates that corporate history. Conching does not replace tempering: tempering controls cocoa-butter crystals and gives finished chocolate its gloss and clean snap.
