Which Valencia restaurateur claimed to have made record-sized paellas?

The story behind the answer

Valencia restaurateur Juan Galbis claimed to have made record-sized paellas, including a giant paella prepared for about 110,000 people in 2001.

Galbis’s earlier 1992 paella, made in Valencia, is listed by Guinness World Records as weighing 27,215.15 kilograms and feeding more than 100,000 people. Guinness identifies the maker as Juan Carlos Galbis; the quiz’s shorter “Juan Galbis” is the same person.

The 2001 event reportedly surpassed the earlier production and involved a huge pan, a large cooking team, and thousands of kilograms of rice, meat, vegetables, and fuel. These spectacles belong to Valencia’s tradition of preparing communal paellas for festivals and public gatherings.

A common mix-up is confusing Galbis with famous chefs such as Ferran Adrià or José Andrés. They are associated with Spanish or international cuisine, but the giant-paella records are associated with the Galbis family and its paella business.
