Which Marche dish similar to lasagna has the alternate spelling vincesgrassi?
Answer
vincisgrassi
Answer
vincisgrassi
The Marche dish similar to lasagna is vincisgrassi, also spelled vincesgrassi.
Vincisgrassi is a baked pasta specialty of Italy’s Marche region, usually made with flat pasta sheets, a rich regional ragù and béchamel. Marche versions can include mushrooms and chicken offal such as livers and sweetbreads, giving the dish a more distinctive character than many everyday lasagne recipes.
Its unusual name is often linked by tradition to Alfred von Windisch-Grätz, an Austrian general associated with the 1799 siege of Ancona. The story says the dish was prepared in his honour, although the exact origin is uncertain. A 1779 cookbook already described a related dish called princisgrass, suggesting the recipe predates or complicates the later military legend.
“Vincesgrassi” is an alternate spelling, not a different dish. The name is also commonly written vincisgrassi alla maceratese for the Macerata style. In 2022, that version was registered in the European Union as a traditional speciality guaranteed.
