Tebasaki is the Japanese fried-chicken dish made from chicken wings and especially associated with Nagoya.
The name tebasaki literally refers to a chicken wing tip or wing section. In Nagoya-style cooking, the wings are fried and coated or seasoned with a savory-sweet glaze, often accompanied by sesame seeds and pepper.
Tebasaki is strongly linked with Nagoya’s izakaya culture and is commonly eaten as a bar snack or shared dish. Its use of whole wing pieces distinguishes it from karaage, which is more often made with boneless or bone-in chunks of chicken.
The dish is also associated with restaurant chains that helped spread Nagoya-style tebasaki throughout Japan. It should not be confused with chicken nanban, which is usually served with sweet-and-sour sauce and tartar sauce.
