Laziji is the spicy fried-chicken style associated with Sichuan cuisine.
The Chinese dish is also called Chongqing chicken because it is strongly linked with Chongqing, a municipality known for intensely flavored food. Chicken pieces are fried and tossed with dried red chilies, Sichuan pepper, aromatics, and seasonings.
The dish is famous for its dramatic presentation: the amount of dried chili can greatly exceed the amount of chicken. Diners usually pick through the chilies for the meat rather than eating all of the peppers.
Laziji is often confused with Kung Pao chicken, another Sichuan-related dish. Kung Pao chicken is typically stir-fried with peanuts, while laziji is defined by fried chicken pieces and a large quantity of dried chilies.
