Popeyes began in 1972 as Chicken on the Run before becoming Popeyes. Alvin C. Copeland Sr. opened the first restaurant in Arabi, Louisiana, near New Orleans.
The original concept struggled, so Copeland changed the recipe and introduced a spicier style of fried chicken associated with Louisiana cooking. He also changed the name to Popeyes Mighty Good Fried Chicken. The brand was later shortened to Popeyes.
The name refers to the fictional detective Jimmy “Popeye” Doyle from the film The French Connection, rather than the cartoon sailor. Popeyes grew through franchising and became particularly known for its spicy fried chicken, biscuits, and Louisiana-inspired menu.
