Sodium bicarbonate is the compound commonly known as baking soda and has the formula NaHCO₃.
The formula contains sodium, hydrogen, carbon, and oxygen. In baking, sodium bicarbonate releases carbon dioxide when it reacts with an acid, helping doughs and batters rise. Acids used with it can include buttermilk, yogurt, lemon juice, or cream of tartar.
Sodium bicarbonate is often confused with sodium carbonate, Na₂CO₃, which is commonly called washing soda. The two compounds are related, but sodium carbonate is more alkaline and is not the same ingredient used in ordinary baking.
Baking soda also appears in household cleaning products, fire extinguishers, antacid preparations, and some personal-care products. Its mild alkalinity and ability to neutralize acids explain many of these uses.
