Which actor played second-series chef Terry Hughes?

The story behind the answer

Brian Hall played the second-series chef Terry Hughes in Fawlty Towers.

Terry is the hotel’s Cockney chef throughout the second series. He presents himself as a trained and capable professional, but his relaxed attitude to hygiene and his willingness to cut corners repeatedly alarm Basil. Terry’s blunt kitchen philosophy and rivalry with Manuel create much of the conflict in “The Anniversary”, when the two chefs clash over a paella.

Hall’s performance was deliberately different from the actor’s usual screen image. He often played tough, hard-boiled Cockney characters, whereas Terry is comic, sly and casually irresponsible. John Cleese reportedly encouraged Hall to portray the chef as though he were hiding from the police.

Terry should not be confused with André Maranne’s waiter characters or Andrew Sachs’s Manuel, who also works with food and service in the hotel. Hall appeared as Terry in the six episodes of the second series, which was broadcast in 1979, four years after the first series.
