What name is given to narrower lasagne pasta sheets?

The story behind the answer

Narrower lasagne pasta sheets are called mezze lasagne.

The name appears in descriptions of Italian pasta shapes and means “half lasagne,” referring to sheets that are narrower than standard lasagne. When the narrower sheets also have a ruffled edge, they are called mezze lasagne ricche. The terminology belongs to the broader family of regional and manufacturer-specific names used for flat pasta.

Lasagne themselves are normally broad, flat sheets, sometimes square or rectangular and sometimes made with fluted edges. Other related names describe different dimensions or edges: lasagnette are narrower, while lasagnotte are a longer relative of lasagnette. In Veneto, factory-produced lasagne may instead be called bardele or lasagnoni.

These names can be confusing because Italian pasta vocabulary varies considerably by region, and commercial brands may use familiar names differently. Sciabò refers to ruffled-edge mass-produced lasagne, not simply to narrower sheets. “Mezze” therefore identifies the reduced width, while “ricche” adds the ruffled-edge detail.
