Gözleme is the Turkish filled flatbread often sold as street food and cooked on a griddle.
The dough is rolled or stretched thin, filled, folded, and cooked on a hot griddle called a sac. Common fillings include spinach and cheese, minced meat, potato, or herbs. The finished bread is usually served hot and cut into portions.
Gözleme is associated with Turkish regional and rural cooking, where women traditionally prepared filled breads by hand. It is now common at markets, cafés, roadside stands, and breakfast venues in Turkey, as well as in Turkish communities abroad.
The name is sometimes written without diacritics as gozleme. It should not be confused with baklava, a layered pastry soaked with syrup, or menemen, a dish of eggs cooked with tomatoes and peppers. Gözleme’s defining features are its thin dough, enclosed savory filling, and griddle cooking.
