The Salmon Run boss that throws a bomb is the Steelhead. This large Boss Salmonid inflates a bomb on top of its head, then lobs it toward players from a distance.

A Steelhead’s metal-covered body is heavily protected, so the safest way to defeat it is usually to attack the bomb while it is still charging. Destroying the bomb causes an explosion that defeats the Steelhead and can also damage nearby Salmonids. If the bomb is allowed to launch, its wide blast can cover a dangerous area in ink.

The Flyfish is the most common mix-up because it also involves bombs: players throw bombs into the Flyfish’s open missile launchers to destroy them. That is a counterattack mechanic, not the boss’s signature attack. Steel Eels ram through the stage, while Maws attack from below, making Steelhead the single canonical answer here.
