What is the name of the quick-draw minigame in Kirby Super Star?

The quick-draw minigame in Kirby Super Star is called Samurai Kirby.

In Samurai Kirby, the player waits for a visual and audio signal, then presses the button as quickly as possible. The winner is the character who reacts first, giving the minigame the feel of a stylized samurai duel rather than a conventional platforming challenge.

Kirby Super Star was released for the Super Nintendo Entertainment System in 1996. It was designed as an anthology containing several shorter adventures and side activities instead of one continuous campaign. Samurai Kirby and Megaton Punch are the game's two original sub-games.

The name can be confused with Quick Draw because Samurai Kirby resembles the quick-draw duel in Kirby's Adventure. Quick Draw is not the official name of the Super Star minigame, however. Samurai Kirby also returned in the Nintendo DS remake Kirby Super Star Ultra, alongside additional minigames and modes.
