Welsh rarebit is a British savoury dish consisting of a cheese mixture grilled on slices of toast.
The topping traditionally combines melted cheese with ingredients such as ale, mustard, flour, and seasonings. It is spread over toast and grilled until bubbling and browned. Cheddar is commonly used today, although recipes vary in the type of cheese and liquid added.
The dish was historically called Welsh rabbit, despite containing no rabbit. “Rarebit” appears to have developed later as a humorous or corrective form, but the exact linguistic history is uncertain. Welsh rarebit is more substantial and seasoned than ordinary cheese on toast. Some versions add Worcestershire sauce, while “Buck rarebit” adds an egg and “Blushing Bunny” uses tomato.
