Who was the Thai prime minister who promoted Pad Thai?

The story behind the answer

The Thai prime minister who promoted Pad Thai was Plaek Phibunsongkhram. Often known as Phibun, he used food as part of a broader campaign to build a modern Thai national identity.

Phibunsongkhram served as prime minister from 1938 to 1944 and again from 1948 to 1957. During his first period in office, his government encouraged rice-noodle dishes as Thailand faced wartime shortages and sought to reduce domestic rice consumption. Pad Thai was promoted as inexpensive, nutritious, hygienic, and distinctly Thai.

The dish’s origins are more complicated than the popular story suggests. Stir-fried rice noodles were influenced by Chinese culinary traditions, and historians debate how much of the dish was invented by the government versus standardized and popularized by it. Phibun is therefore best described as the leader who promoted and nationalized Pad Thai, not necessarily its sole inventor.

A common mix-up is confusing Phibun with later Thai prime ministers such as Thaksin Shinawatra or Yingluck Shinawatra. Their administrations came decades after Pad Thai had already become a national symbol.
