Momofuku Ando invented instant noodles in Japan in 1958 after developing Chicken Ramen.

Ando created the product while seeking an inexpensive, quick food that could be prepared with hot water. His breakthrough was flash-frying cooked noodles, which removed moisture and created a porous structure that rehydrated rapidly.

Chicken Ramen launched on August 25, 1958, through Nissin Foods. It was initially more expensive than ordinary fresh noodles, but its convenience helped it become a major commercial success.

Ando later introduced Cup Noodles in 1971. He is sometimes confused with Kikunae Ikeda, who is associated with the discovery and commercial development of monosodium glutamate, not instant noodles.
