Curt Jones invented Dippin’ Dots, the beaded cryogenic ice cream. Jones, a microbiologist, developed the product in 1988 by flash-freezing small droplets of ice-cream mixture in liquid nitrogen.

The rapid freezing process creates tiny rounded pieces rather than the continuous scoopable mass associated with conventional ice cream. Because the droplets freeze so quickly, they form a distinctive texture that feels colder and more granular than ordinary frozen dessert.
