Who are credited with creating tarte Tatin?
Answer
Tatin sisters
Answer
Tatin sisters
The Tatin sisters are credited with creating tarte Tatin.
The dessert is named after Stéphanie and Caroline Tatin, who ran the Hôtel Tatin in Lamotte-Beuvron, France. Tarte Tatin is an upside-down apple tart: apples are caramelized in butter and sugar, covered with pastry, baked, and then inverted for serving.
A popular story says Stéphanie accidentally left apples cooking too long, placed pastry over them, and finished the tart in the oven. However, that tale is not certain. Historians have suggested that the sisters refined or popularized an older Sologne dessert rather than inventing the basic technique from nothing. The sisters themselves apparently never called it tarte Tatin or published a recipe.
That historical qualification does not make the quiz answer wrong: the Tatin sisters are the standard credited creators and the people whose name became attached to the dish. The tart was later promoted more widely by culinary writers and Parisian restaurant culture. It can also be made with pears, peaches, quinces, or vegetables, but apples remain the classic filling.
