Which Vietnamese noodle soup is commonly known as hủ tiếu?

The story behind the answer

Hủ tiếu is a Vietnamese noodle soup especially associated with southern Vietnam.

Its noodles are usually made from rice, and the bowl may contain pork, shrimp, offal, or other meats and seafood. Broth-based and dry versions both exist, with toppings and preparation changing across southern cities.

The dish developed within the multicultural food environment of the Mekong Delta. Its history is linked to Chinese and Khmer culinary influences, while Vietnamese cooks adapted it into many local forms.

Hủ tiếu should not be confused with bún dishes, whose noodles are generally round rice vermicelli. Hủ tiếu noodles are often flatter or more translucent, depending on the regional style and manufacturer.
