Nem nướng is the Vietnamese dish consisting of grilled pork sausage served with rice paper, herbs and dipping sauce.
The sausage is made from seasoned ground pork and is shaped before being grilled over charcoal or another heat source. Its surface becomes browned and slightly caramelized, while the interior remains tender. Nem nướng is commonly served with rice paper, lettuce, herbs, cucumber, pickled vegetables and a dipping sauce.
Diners may wrap the sausage and accompaniments in softened rice paper, creating a fresh roll at the table. The exact sauce and garnish vary by locality, and the dish is particularly associated with central and southern Vietnamese food traditions.
Nem nướng should not be confused with nem chua, a fermented pork preparation, or chả lụa, a steamed pork sausage. It also differs from bún chả, whose defining elements are Hanoi-style grilled pork, vermicelli and dipping sauce.
