Bún thịt nướng is the Vietnamese dish combining grilled pork with rice vermicelli.
The bowl usually contains thin rice vermicelli, slices of marinated grilled pork, fresh herbs, lettuce or vegetables, and roasted peanuts. A sweet-sour fish-sauce dressing is poured over the ingredients shortly before eating.
The name is descriptive: bún means rice vermicelli, while thịt nướng means grilled meat. Unlike many famous Vietnamese noodle dishes, it is generally served without a hot soup broth.
Regional versions differ in garnishes and sauces. In some places, spring rolls or fried egg rolls are added, but the defining combination remains grilled pork and vermicelli.
