Brik is a Tunisian pastry traditionally filled with egg and often shaped as a folded triangle.
The pastry uses a very thin dough known as malsouka or warqa. A common filling includes an egg, tuna, parsley, onion, and sometimes potato or cheese. The filled dough is folded and fried until crisp, with the egg often remaining soft inside.
Brik is especially associated with Tunisian cuisine and is frequently served during Ramadan, when fried pastries are popular at the evening meal. The pastry can be shaped in several ways, including triangles, semicircles, and rolls.
Brik is sometimes confused with samosa because both are filled and fried pastries. Their doughs, fillings, and regional traditions differ. Brik’s especially recognizable version centers on a whole egg enclosed in thin pastry, while samosas usually contain a cooked savory filling.
