Spanish rice is the Tex-Mex side dish that combines rice with tomatoes, onions, garlic, and spices.

Despite its common English name, Spanish rice is not generally a traditional dish from Spain. In the United States, the term usually refers to Mexican-style rice cooked with tomato, onion, garlic, broth, and seasonings. “Mexican rice” is another widely used name for the same broad preparation.

The rice is often sautéed before liquid is added. This step helps the grains stay separate and gives the dish a lightly toasted flavor. Tomato may appear as fresh tomato, tomato sauce, or tomato bouillon, depending on the recipe.

Spanish rice commonly accompanies enchiladas, tacos, tamales, and other Tex-Mex combination plates. It should not be confused with arroz con leche, a sweet rice pudding, or Louisiana dirty rice, which gets its flavor and color from meat and organ meats.
