Which restaurateur founded Fuddruckers in San Antonio?

The story behind the answer

Philip J. Romano founded Fuddruckers in San Antonio.

Romano opened the restaurant in 1979 under the original name Freddie Fuddruckers. He converted an old bank into the first location and built the concept around the idea that customers wanted a better, fresher hamburger. The restaurant ground its beef on site, baked its buns in the restaurant, and offered toppings such as lettuce, tomatoes, onions, and cheese sauce separately so diners could assemble their burgers.

The unusual name was derived from “Fudpucker World Airways,” a fictional airline joke associated with pilots and aviation culture. It was not named for another restaurateur or a Texas celebrity, which helps distinguish Romano from the distractor choices.

Romano left the chain in 1988 and later founded Romano’s Macaroni Grill. Fuddruckers continued expanding through franchising; by 1988, it had grown to about 150 restaurants. The chain’s original identity remains tied to made-to-order burgers, freshly baked buns, and a build-your-own topping bar.
