Birria originated in the Mexican state of Jalisco.

Birria is a regional variation of barbacoa associated with western Mexico, especially Jalisco. Traditionally it was made with goat or lamb, although beef is now widespread, particularly in birria tacos. The meat is marinated in an adobo of dried chiles, vinegar, garlic, herbs, and spices, then slowly cooked until tender.

Historically, the word birria referred in Jalisco and nearby areas to meats cooked or roasted in a pit or earth oven—preparations called barbacoa elsewhere in Mexico. The dish is strongly associated with Guadalajara and surrounding communities, including Tlaquepaque, and is commonly served at weddings, baptisms, holidays, and other gatherings.

Recipes vary by region, so Jalisco is best understood as the recognized heartland rather than the only place where birria is made. Neighboring states such as Michoacán, Colima, Zacatecas, and Aguascalientes have their own versions. Modern birria tacos are often served with consommé for dipping, but that presentation is newer and does not change the dish’s Jalisco origin.
