Chilaquiles are a Mexican breakfast dish of tortilla chips simmered in salsa and topped with ingredients such as eggs or cheese.
The dish uses fried or baked pieces of corn tortilla, called totopos, which are briefly cooked in red or green salsa. Common toppings include crema, queso, onion, avocado, cilantro, shredded chicken, and fried eggs. The chips may remain partly crisp or become soft, depending on when the salsa is added.
Chilaquiles are commonly served for breakfast or brunch and are also a practical way to use leftover tortillas and salsa. Red chilaquiles use a tomato- or dried-chile-based sauce, while green versions use tomatillos and green chiles.
They are often confused with nachos because both use tortilla chips and toppings. Nachos are generally assembled as a snack and baked or topped, while chilaquiles are defined by cooking the chips in salsa.
