Bibim-guksu is a Korean noodle dish made with wheat noodles in a cold, spicy, tangy sauce and often topped with egg.
The name combines bibim, meaning mixed, and guksu, meaning noodles. Cooked noodles are chilled and mixed with a sauce commonly containing gochujang, vinegar, sugar, garlic, and sesame oil. Cucumber strips, sesame seeds, and a boiled egg are frequent garnishes.
Bibim-guksu is generally served cold, making it especially popular during warm weather. The dish is distinct from naengmyeon, whose noodles are usually made from buckwheat or starches and are served in a different cold broth or sauce tradition.
