Which Japanese street food is a savory pancake filled with cabbage and meat?
Answer
Okonomiyaki
Answer
Okonomiyaki
The Japanese street food that is a savory pancake filled with cabbage and meat is okonomiyaki.
Okonomiyaki is made from a wheat-flour batter containing shredded cabbage, with ingredients such as pork, seafood, green onion, or cheese mixed in or layered on top. It is cooked on a flat iron griddle called a teppan and commonly finished with okonomiyaki sauce, Japanese mayonnaise, dried seaweed, bonito flakes, and pickled ginger.
The dish has two famous regional styles. Osaka or Kansai okonomiyaki usually mixes the ingredients into the batter before cooking. Hiroshima-style okonomiyaki layers the ingredients and often adds yakisoba noodles and a fried egg. The name combines Japanese words meaning roughly “how you like” and “grilled,” reflecting its customizable ingredients.
It is sometimes confused with monjayaki, a related Tokyo dish made with a much more liquid batter. Okonomiyaki also became especially popular as an inexpensive, filling food during Japan’s postwar period, when rice was scarce.
