Which Japanese city is famous for tonkotsu ramen?

The story behind the answer

Which Japanese city is famous for tonkotsu ramen? Fukuoka is the canonical answer. The city, on Japan’s southern island of Kyushu, is widely regarded as the home of Hakata ramen, a celebrated local style of tonkotsu ramen.

Tonkotsu means “pork bone” in Japanese. Its hallmark is a cloudy, creamy broth made by simmering pork bones—often including marrow and collagen—for many hours. Hakata ramen typically pairs this broth with thin, straight noodles that cook quickly. Diners may also choose noodle firmness, from soft to very firm.

Fukuoka is sometimes confused with Kumamoto, another Kyushu city known for a regional pork-bone ramen that often includes garlic oil. Sapporo is more strongly associated with miso ramen, while Tokyo is known for soy-sauce-based styles. Although tonkotsu ramen is now served throughout Japan and internationally, Fukuoka remains its most widely recognized home.
