Mie goreng is the Indonesian noodle dish consisting of fried yellow noodles cooked with sweet soy sauce, vegetables, egg, and often chicken.
The Indonesian phrase “mie goreng” literally means “fried noodles.” The dish commonly uses yellow wheat noodles, garlic, shallots, cabbage, greens, tomatoes, chili, and kecap manis, a thick sweet soy sauce. Chicken, shrimp, beef, or tofu can provide additional protein, while fried shallots and crackers often finish the plate.
Mie goreng is sold by street vendors, restaurants, and packaged-food companies throughout Indonesia. It is also popular in neighboring Malaysia and Brunei, where local versions may differ in seasoning and ingredients.
The dish is distinct from mie ayam, in which noodles are generally served with seasoned chicken and soup or broth on the side. “Goreng” identifies the dry stir-fried preparation, not a particular noodle shape.
