The ice-cream dessert named after Australian soprano Nellie Melba is Peach Melba.
French chef Auguste Escoffier created the dessert in the 1890s while working at the Savoy Hotel in London. He named it in honor of Nellie Melba, the stage name of singer Helen Porter Mitchell, after hearing her perform at Covent Garden. The original presentation combined a poached peach, vanilla ice cream and raspberry purée.
Escoffier first served an early version in 1892, using an ice sculpture of a swan as part of the presentation. He later refined the recipe and included it in his culinary writing. Peach Melba is often confused with Melba toast, which was also named for Nellie Melba, but the two foods are unrelated: one is a fruit-and-ice-cream dessert, while the other is very thin toasted bread. Modern versions may use fresh peaches, but the classic dessert uses poached fruit and raspberry sauce.
