Parsley is the dominant ingredient in Lebanese tabbouleh.

Tabbouleh is a Levantine salad built primarily from finely chopped parsley, with tomatoes, bulgur, onion, lemon juice and olive oil. In traditional Lebanese preparations, the herbs and vegetables greatly outweigh the small quantity of bulgur.

The dish is served cold and is a familiar part of mezze, the assortment of small dishes common across the eastern Mediterranean. Mint is often included, but it is a supporting herb rather than the main ingredient.
