Hercules Posey was the enslaved chef who prepared elaborate meals for George Washington at Mount Vernon.
Known by his first name, Hercules served as Washington’s principal cook in the presidential household and later at Mount Vernon. He was highly regarded for his culinary skill and managed sophisticated meals associated with elite late-18th-century dining. Washington described him as an excellent cook, though Hercules remained enslaved under the law.
Hercules escaped from Mount Vernon in 1797, on Washington’s birthday. He was never recaptured, and later evidence places him in Philadelphia. Hercules is sometimes confused with James Hemings, the enslaved French-trained chef who cooked for Thomas Jefferson. Both men were prominent enslaved chefs, but they served different presidents.
