Koshari is a layered or mixed vegetarian dish built from inexpensive staples. A serving commonly includes rice, brown lentils, short pasta or macaroni, chickpeas, fried onions, and a spiced tomato sauce. Garlic vinegar and hot sauce are often offered separately or spooned over the top.
The dish became strongly associated with Egypt’s urban street-food culture because its ingredients are filling, affordable, and easy to prepare in large quantities. It is now served by dedicated koshari shops as well as home cooks.
Koshari is sometimes confused with other Egyptian rice dishes, especially fattah. Fattah generally combines bread, rice, meat, and a garlicky vinegar sauce, while koshari is notable for its pasta, lentils, chickpeas, and vegetarian composition.
