Mexico is the country of origin of tacos. The taco developed from Mesoamerican foods built around tortillas, especially corn tortillas, which Indigenous peoples in the region had eaten for centuries before European colonization.

The exact history is debated. Some historians connect tacos to pre-Columbian tortilla dishes filled with fish or other ingredients, while a popular theory says Mexican silver miners later used the word “taco” for paper-wrapped explosive charges because they resembled filled tortillas. Early written references to tacos appear in Mexican sources from the 19th century.

Tacos are not one single recipe. Regional Mexican versions use fillings such as pork, beef, seafood, beans, or vegetables, along with salsa, onion, cilantro, and lime. The hard-shell taco familiar in many U.S. restaurants is a later Mexican-American development, so it should not be mistaken for the entire taco tradition.

Mexico’s taco culture also includes distinctive styles such as tacos al pastor, which reflect the influence of Lebanese immigrants, and fish tacos associated with Baja California.
