What was the main food crop of the Aztecs?

The story behind the answer

The main food crop of the Aztecs was maize, also called corn. It was the central staple of Aztec cuisine and appeared in the diet of people from many social classes. Maize was ground and prepared as tortillas, tamales, and atolli, a drinkable gruel, making it a foundation of everyday meals.

Aztec farmers grew maize alongside beans and squash, a combination often called the “Three Sisters.” These crops complemented one another: climbing beans could use maize stalks for support, while squash helped cover the soil. In the lake environment around Tenochtitlan, chinampa gardens made highly productive agriculture possible.

Maize was more than a source of calories. It held religious and cultural importance, and Aztec traditions treated the crop with respect. Women were recorded blowing on kernels before cooking them so the maize would not fear the fire. Beans, chili peppers, amaranth, chia, and other foods were also important, but they did not replace maize as the empire’s principal staple.
