Alvin C. Copeland Sr. started the restaurant in the New Orleans suburb of Arabi, Louisiana. Its original concept emphasized Southern-style fried chicken, but the business struggled during its early period. Copeland later changed the restaurant's name to Popeyes Mighty Good Fried Chicken and adjusted the recipe and operating style.
