What Vietnamese term can mean freshly made pho noodles?

The story behind the answer

Freshly made phở noodles are called phở tươi. The phrase literally combines phở, the rice-noodle dish, with tươi, meaning fresh.

Fresh bánh phở is made from rice flour and water, then steamed into sheets and cut into flat strands. Restaurants usually blanch these noodles briefly before adding broth, so they remain tender without becoming mushy. Fresh noodles have a softer, more delicate texture than their dried counterparts.

A common mix-up is confusing phở tươi with phở khô. Tươi identifies the noodle’s fresh state, while khô means dried; neither term by itself specifies the meat, broth, or toppings. Phở trộn, by contrast, refers to mixed or tossed pho, and phở chua describes a sour-style preparation. The broader Vietnamese noodle vocabulary also uses tươi and khô for other noodle varieties.
